Hey! Does your family enjoy breakfast? The kids and I love breakfast, but I also love breakfast to be super easy! This is the little littles favorite thing to eat (other than bread, and who doesn’t love bread?!), and this is one of my favorite freezer recipes! I make these and flash freeze them! Lasts about two weeks, and pair with a scrambled egg, can’t go wrong! I found these one day on Genius Kitchen! Here’s the recipe:

Banana Oatmeal Freezer Muffins

  • 2cups flour

  • 1cup quick-cooking oats

  • 1cup brown sugar

  • 1teaspoon baking soda

  • 1teaspoon baking powder

  • 1⁄2teaspoon salt

  • 1⁄2teaspoon nutmeg

  • 1teaspoon cinnamon

  • 1 1⁄2cups bananas, mashed

  • 2eggs

  • 1⁄3cup butter, melted

  • 1teaspoon vanilla

    1. Preheat oven to 375°F In medium bowl, stir together the flour, oatmeal, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. In a separate bowl, combine the mashed bananas, eggs, vanilla and butter. Add the banana mixture to the flour mixture, stirring just until the dry ingredients are moistened.
    2. Spoon batter into greased muffin cups. Bake for 15 to 18 minutes (start watching around 12 minutes; oven temperatures vary) or until toothpick inserted into center muffin comes out clean. Let cool in pan on wire rack for 10 minutes. Remove muffins from pan and let cool on wire rack.
    3. Once muffins are cool, transfer them from muffin pan to a lined pan, not touching one another. Freeze them for 2 hours, then you can transfer to a freezer safe container. Reheat one at a time for 30 seconds on high in microwave.
